Juan Martinez, PhD, FCSI
Principal
Juan Martinez is a 39 year industry veteran. Juan is Principal and Founder of Profitality Labor Guru, an Industrial Engineering Consulting Company that helps brands optimize their investment to drive better “unit economics”. This experience spans to over 100 different concepts across all menu and service system offerings. Prior to becoming a consultant Juan led the research and development team at Burger King were he was responsible for innovation in the areas of menu, operations and equipment. Juan has a BS in Industrial and Systems Engineering from Georgia Tech, and an MS in Engineering Management and PhD in Ergonomics from the University of Miami. He is a member of several professional organizations, including Foodservice Consultants Society International (FCSI), where he is in the “Board of Trustees”. As an industry “thought leader” Juan frequently speaks at industry gatherings, and has written over 100 articles in foodservice and Industrial Engineering Journals, including a regular column in the Foodservice Equipment & Supplies web site. Juan is also a Fellow of The Culinary Institute of America.
Ignacio Goris
Principal
Ignacio Goris Ignacio Goris, is the President and Founder of Profitality Labor Guru. He has 20 years of experience in the foodservice industry, during which time he has worked with over 80 brands. He has a Masters in Industrial Engineering with a focus in Operations Research, as well as a BS in Industrial and Systems Engineering. Ignacio’s expertise includes process re-engineering, labor management systems and concept design, with focus on helping brands improve the efficiency and return on investment of the concepts, in order to fuel brand growth. Ignacio has developed a proprietary web based labor management system that is used during the execution of labor projects.
Carlos Espinosa
Director & Shareholder
He has over 10 years of process analysis and improvement consulting experience at Profitality Labor Guru. His scholastic background includes a BS in Industrial and Systems Engineering and an MS in Engineering Management from Florida International University. In addition to providing Industrial Engineering expertise, Carlos’ focus is working closely with clients as a project manager to ensure optimum application and use of the internal Profitality resources to align with the client’s direction and project goals and objectives. Carlos’ experience spans to more than 50 different brands across all service and menu offerings. Carlos is also Lean Six Sigma Black Belt certified.
Juan Pablo Lopez
Director & Shareholder
He has over 10 years of Industrial Engineering consulting experience at Profitality Labor Guru. Juan Pablo graduated with a BS in Industrial and Systems Engineering from Florida International University. In addition to providing Industrial Engineering expertise Juan Pablo’s works side by side with clients as a project manager to ensure optimum application and use of the internal Profitality Labor Guru resources, to align with the client’s direction and project goals and objectives. Juan Pablo’s experience spans to more than 50 different brands across all service and menu offerings. Juan Pablo is also Lean Six Sigma certified.
Kaytee Schrantz
Manager of Consulting
Kaytee’s career has been focused on applying Industrial Engineering principles in a variety of industries specializing on process improvement, analytics & insights. She began her career as an engineering consultant for the food service industry supporting clients through prototype and remodel designs, identifying efficiencies to drive sales and reduce costs and developing activity-based labor management systems. Prior to joining Profitality Labor Guru, she spent 12 years at The Walt Disney Company where her most notable contributions include coordinating key functions to support the opening of Star Wars: Galaxy’s Edge at Disney’s Hollywood Studios, which was the largest single themed land expansion in Disney Parks history, influencing key design requirements for the remodel of Epcot's MouseGear, Disney’s second largest merchandise shop, and developing food & beverage capacity/demand modeling methodology used to assess needs and justify capacity gains initiatives across parks and resorts. Kaytee has a Master of Science and a Bachelor of Science both in Industrial Engineering from the University of Miami.

Daniel Lanzziano
Senior Engineering Consultant
Over 8 years of Industrial Engineering consulting experience at Profitality Labor Guru. Daniel graduated with a BS in Industrial and Systems Engineering from Florida International University. In addition to providing Industrial Engineering expertise Daniel works side by side with clients as a senior engineering consultant to ensure optimum application and use of the internal Profitality Labor Guru resources, to align with the client’s direction and project goals and objectives. Daniel’s experience spans to more than 50 different brands across all service and menu offerings. Daniel also has experience as a process improvement engineer.
Stephanie Fernandez
Director of Business Development
Stephanie Fernandez is a Business Consultant with PROFITALITY® and the Director of Business Development. Prior to joining PROFITALITY®, Stephanie worked as a Financial Advisor with UBS Financial Services where she became a Certified Financial Planner™ professional. Stephanie has a Bachelor’s Degree in Business Administration with a major in Finance from the University of Miami. Stephanie’s main focus is on marketing and business development, as well as providing general business consulting support in strategic client and company initiatives. Stephanie is a Lean Six Sigma Green Belt.
